Who doesn’t loveÂ Australia dayÂ it is a chance to get together with family and friends and celebrate our amazing country with all things Aussie.
Pies, pavlova, beer and damper are all great but there is nothing more Australian then eating a yummy fluffy Lamington.
I make lamingtons every year so I was pretty happy when I came across this Kate McGhie recipe in the home section of the Herald Sun yesterday, How great are they in a doughnut shape < makes them taste 10 times better.
2 Cups plain flour
1/2 cup caster sugar
1 1/2 tsp baking powder
Pinch sea salt flaked
2 large eggs whisked
1/2 cup natural yogurt
1tsp vanilla extract
1/3 cup butter melted
2/3 Cup Strawberry jam,
2 cups pure icing sugar sifted
3 tbsp. cocoa
2tsp soft butter
1 1/2cups desiccated coconut.
Preheat oven to 180C (160fan).
Lightly grease donut pan with melted butter.
Sift flour, sugar, baking powder and salt into bowl.
Add eggs, yogurt, vanilla and butter and enough water to make it a sticky ploppy batter.
Fill piping bag with mixture and half fill moulds.
Fill another piping bag with jam and pipe a seam of jam on top of batter.
Cover jam with remaining batter. Bake for any where between 10-15 minutes depending on size of pan or moulds.
Cakes are done when golden and spring bake when touched.
Cool in pan for 10 minutes and then turn out onto rack to cool completely.
Make icing by placing icing sugar, coco and butter into a bowl and add enough boiling water to make a consistency of thicken pouring cream.
Using 2 forks, dip each cake in icing, tap until excess runs off and toss in coconut.
Put on a rack to set.
